Baked By The Other Melissa: Peppermint Bark

For distraction purposes, I managed enough resolve to bake triple layer peppermint bark for the holidays. They actually took a bit longer than I thought they would, but they came out totally successful and delicious!

The ingredients were simple: white chocolate, dark chocolate, crushed peppermint or candy canes, some veggie oil, and vanilla extract. It was recommended that we use good quality chocolate so I splurged on some Lindt. Big pimpin’!

For the ‘crushed candy cane/peppermint’ part, I came up with this brilliant method of crushing that didn’t require a food processor (which was advised). I stuck those canes and peppermints into a ziploc bag and then used a hammer. And boy, let me tell you: there’s nothing quite like slamming something with a hammer over and over again without worrying if you’re making a hole in a wall. Super therapeutic!

I then mixed and melted each layer and once they were frozen, cut them out into square-like pieces. THAT was difficult. My knives are ten dollar ikea ones so you can imagine how sharp these knives were not. I was practically sweating and using all of my body weight, but after countless minutes, it worked. Yay!

I was planning on wrapping them up and giving them as little extra hanukkah presents to my family, but I unfortunately left them in my fridge!

Anyways, I guess that’ll give me a good treat to look forward to when I return home. 🙂
