In which, I showcase my culinary triumphs and failures while I hone my skills as a baker/cook/pâtissière.
Now, readers: this may come as a shock to you. Until recently, I have never made any sort of fruit pie. Pecan pie? You got it. Chocolate cream pie? Many times. But a basic apple pie? Nope. Never. It could be that I’m actually not the biggest fan of fruit pies, but really, it’s because it never even occurred to me to make one. Until now. Here’s how I did it.
After deciding to make one, I began to prepare. It was a week-long process. I researched for days on what makes the ultimate apple pie (best type of crust, apple, sugar, etc) and went to various groceries (read: Fresh Direct and Key Foods) for all the supplies. I’ve read that mixing different types of apples was ideal, so I baked mine with gala and granny smiths.I didn’t want to skimp on any part of the pie, so I naturally attempted to make a homemade crust as well. Which was arguably the hardest part. I found a recipe that used sour cream alongside cold butter, and it worked marvelously. The crust came out flaky, buttery, flavorful and delicious. It’ll be my go-to recipe for pie crust in the future.I was tempted to lattice the pie crust because I’m overly zealous but changed my mind at the last minute and made a simple one with cute little slits instead.Overall, it took me about 40 minutes to prepare. It was actually incredibly easy and I suspect will take me a lot less time when I bake it again. The taste? Absolutely delicious. I’m now a fan of apple pies. Yes, I ate all of it,. By myself. The next pie I attempted was a favorite of Agent Cooper’s: damn fine cherry pie. I’ve been excited to try this out for quite some time now and thought the announcement of more Twin Peaks was the perfect time to do so. However. I’m going to be honest. This pie was ridiculously hard and annoying to make. I didn’t have a cherry pitter so I had to pit every single one of those damn cherries by hand. No, it wasn’t therapeutic. It was just annoying. Also, I ate a quarter of the cherries along the way.As if I didn’t already challenge myself enough with the pitting, I then decided this would be the pie I would attempt latticing on. My second pie of all time. It was ambitious, but I think it still came out alright!The worst part? I realized I don’t like cherry pie. At all. It tasted okay and “right” for a cherry pie, but I’m just not really a fan of them to begin with. I ended up throwing most of it out. Such a shame. Single people behavior.
